Japan’s Nenohi is among the last 5% of knife producers that still uses the Honyaki method. Honyaki is the long, laborious process of hammer shaping (or hand forging) and water tempering a knife. The Honyaki process of hammering a knife into shape removes impurities creating harder steel with wonderful edge retention.

The Nenox series is supreme in quality knife performance. Each blade is made from Nenox steel – a top quality high-carbon alloy – known for its strength and resilience. The result is an extremely sharp, long-lasting, and rust resistant blade. As a Nenox blade is sharpened over time, the sharper the edge gets.
